For those of you who have been faithful readers for a while, you know that our Firm has an annual Thanksgiving tradition of highlighting a few of the clients for whom we are thankful. This year, we have chosen to highlight three of our clients who operate innovative and creative businesses in very different industries.
First, we highlight our gluten free bakery client Flakely, founded and owned by Chef Lila Collelo. I have wanted to highlight Lila’s work for several years but waited until her fantastic products could be ordered by all of our readers, not just those in the Philly area. So this year is the year!
Second, we highlight our clients Christian and TQ Zorn who own and operate JAMI Rock and Roll Daycare (“JAMI”), a set of six Montessori-inspired, music-based preschool and daycare centers in the Cambridge, Massachusetts area. Our team especially appreciates JAMI’s devotion to inclusion and belonging, values that are also core to our mission.
Last, but not least, is our client Renmatix, a Philadelphia based a renewable materials company that developed and owns the Plantrose® process, a chemical process that utilizes water as a medium to transform plants (such as trees) into new ingredients that are suitable for use in a variety of products and applications, ranging from biofuels to skin care products to industrial applications. One of the things I love most about the trade secrets and patent litigation work we do is learning about new technologies – we are certainly doing that with our work with Renmatix!
You can read more about each of these wonderful businesses below – happy reading and Happy Thanksgiving!
Flakely is a gourmet bakery based in Philadelphia, renowned for its delicious assortment of gluten-free pastries. Flakely was founded by the accomplished chef Lila Colello, whose culinary journey includes prestigious roles as some of the nation’s top restaurants and even The Food Network. However, Colello’s path was redirected after being diagnosed with Celiac Disease several years ago. No longer able to work with traditional flour, Colello made it her mission to craft French pastries that authentically replicated the flavors and textures of their wheat flour counterparts. Since officially launching in 2019, Flakely has garnered attention in the news media and won several awards, including the 2021 Philadelphia Family LOVE Award for Best Gluten-Free Bakery. Flakely baked goods can be found in a number of outlets in the Greater Philadelphia area, is available for pick up and local deliveries (on Thursdays and Saturdays) from its bakery in Manayunk and ships its products nationally to most US locations. ND Galli Law has assisted Flakely on intellectual property matters and looks forward to continuing to support this incredible business!
JAMI Rock and Roll Daycare (JAMI RRDC) is a Montessori-inspired, music-based preschool and daycare founded in Cambridge, Massachusetts that inspires children through a culturally immersive educational program rooted in the values of kindness, empathy, and respect. Children at JAMI RRDC engage in play-based learning and explore their classroom environment and nature through a sequenced, hand-on curriculum designed to inspire creativity, empathy, and confidence – and, of course, a lifetime love of learning! Owners TQ and Christian Zorn are dynamic parents who were inspired to work in music daycare through their own experiences raising their children and their commitment to providing them and all children with excellent childcare. They both also love music and culture. Truly multidisciplinary, TQ and Christian had successful careers in business and finance before launching several daycare centers under the RRDC brand, and leveraged those experiences and a love of travel, exploring and culture to build JAMI RRDC into the growing set of six schools throughout the Cambridge, Massachusetts area. TQ, Christian and their team at JAMI RRDC strive to provide a school community where students and educators alike can experience a sense of belonging and can thrive. ND Galli Law assisted TQ and Christian in trademark ownership and related matters. JAMI RRDC is an awesome company, and ND Galli Law is proud to have helped it, and TQ and Christian, in their work improving the lives of children. (To read more about JAMI RRDC, click here.)

The Plantrose process was developed to provide valuable materials for many applications while protecting the environment, people and all creatures. Its innovative and eco-friendly work has earned Renmatix several accolades and awards, including the prestigious Presidential Green Chemistry Award in 2015 and the Edison Award in 2020.
